The present study focuses on the formulation and evaluation of antidiabetic herbal cookies incorporating jamun seed powder (Syzygiumcumini) as a functional ingredient. Diabetes mellitus is a major global health concern characterized by elevated blood glucose levels and associated metabolic disorders. Jamun seeds are known for their potent antidiabetic activity due to the presence of bioactive compounds such as jamboline, flavonoids, tannins, and phenolic acids, which help regulate blood sugar levels and improve insulin sensitivity.
In this study, herbal cookies were prepared using jamun seed powder along with other nutritionally rich ingredients such as wheat flour, ragi flour, curry leaves, moringa powder, stevia as a natural sweetener, and cashew powder. Different formulations (F1, F2, and F3) were developed by varying the concentration of jamun seed powder and evaluated for organoleptic properties (color, taste, aroma, and texture), physicochemical parameters (pH and ash value), and physical characteristics (hardness).
The results indicated that all formulations were within acceptable limits; however, formulation F2 showed optimum characteristics with good crispness, pleasant taste, acceptable pH (5.7), and appropriate hardness, making it the optimized formulation. The incorporation of jamun seed powder enhanced the functional and nutritional value of the cookies while maintaining acceptable sensory qualities.
The study concludes that antidiabetic herbal cookies formulated with jamun seed powder can serve as a potential functional food for diabetic patients, offering a healthier alternative to conventional high-sugar bakery products. Further studies such as nutritional analysis, shelf-life evaluation, and clinical validation are recommended to establish their therapeutic efficacy.
